It-tfittxija għall-għeruq bejn l-ikel u l-investiment minn imprenditur Malti-Awstraljan

Il-kċina u l-ikel kapaċi joffru indizji importanti fit-tiftix tal-identità nazzjonali u l-għeruq ta’ poplu. L-imprenditur u kok ewlieni Malti-Awstraljan, Shane Delia, jemmen li sab l-għeruq tiegħu u ta’ Malta fil-kċina tal-Lvant Nofsani.

It-tfittxija tal-għeruq u tal-identità Maltija mill-membri tal-komunità Maltija tat-tieni u t-tielet ġenerazzjoni hawnhekk f’Melbourne, tibqa’ għaddejja, mhux biss biex jagħrfu eżattament min huma, iżda wkoll biex jagħmlu l-pass li jmiss.

Shane Delia, 38 sena, imprenditur Malti-Awstraljan. Twieled u trabba’ f’Melbourne fejn missieru kien emigra miż-Żejtun f’eta’ zagħżugħa. Delia bena karriera madwar il-kċina. Illum hu sid ta’ tmien stabbilimenti tal-ikel fl-Awstralja, u jimpjega 150 ruh.

Kuntent bis-suċċess personali li kiseb iżda jħoss li b’mod ġenerali l-komunità Maltija fl-Awstralja setgħet tagħmel aktar biex tirnexxi.

Shane Delia qal ”I think… that… a lot of Maltese have come to Australia and have lived a very good and stable life. Great work ethic, worked hard, they had a loving and beautiful family. But it seems to me the thing that frustrates me the most is the next level.”

Huwa kompla jgħid ”I need more in life. I need a challenge. I want to go back to Malta with my head held high that my family’s sacrifice and risk and challenge have borne fruit. They have come to Australia, they lived their life and achieved their dream. I’d love to come back to Malta and be able to contribute back to the island.”

Shane Delia qal ”viticulture in Malta. It didn’t come from Italy. It came from the Phoenicians. When I started to look at the DNA, all of the cities, all of the structures, all of the core DNA none of it came from Western Europe. So I started looking… maybe there is a natural affinity to the Middle East. That is where I looked, that is where I found a home. That is where my culinary style took me.”

Fil-kcina tar-ristorant tiegħu fil-qalba ta’ Melbourne, Shane Delia jispjega li l-menu tiegħu jippreżenta platti tradizzjonali b’mod avventuruż.

”We try to take Maltese classics, re-invent them, give them some new life and just get people talking. Sometimes people say it’s not good as their mum’s. We’ve realised that and I know it’s not as good as my mum’s either, but at least it gives people to think of Maltese food in a different way. But primarily it is about Middle Eastern flavours and culture” qal Shane Delia.

”I’d like the opportunity to do something in Malta. I’d like Malta as a restaurant to have – a sister restaurant in Malta. I mean, I have had opportunities before when we’ve done things in other countries. We set up some things for a few months. But I’d love to have something more substantial.”
